1 1/2 cups pitted dates
1 1/4 cups desiccated coconut
1/2 cup almond meal
5 tablespoons or cacao powder
3 tablespoons coconut oil
1/2 teaspoon vanilla powder or extract
2 tablespoons honey
2 tablespoons chia seeds
Good pinch of salt
Melted chocolate to decorate (optional)

You can make a large batch, wrap them individually in baking paper and store in an airtight container in the freezer so they are ready to go… just grab one out on the way to work or for a day out!
1In a food processor combine dates, coconut, almond meal, cacao powder, coconut oil, vanilla, honey, chia seeds and salt until mixture comes together.
Spoon mixture into small dish or tray lined with baking paper and press into shape using the back of a spoon.
Put into the fridge to set for about 30 mins.
Once set remove from fridge and cut into bars.
Drizzle with melted chocolate and top with some extra coconut.
Store in an airtight container in the fridge. Best eaten within 7 days. You can also store these in the freezer by wrapping them individually in baking paper and storing in an airtight container.
